I am not a fan of breakfast. I find it boring and I tend to eat the same old things day after day. I wish I had the energy in the morning to cook pancakes or make wonderfully yummy french toast like my brother does but I don't so I have cereal or oatmeal for breakfast instead. Can you say Blah...
Now breakfast bowls are all the rage. The only problem is that they are all (or mostly) made of oatmeal which I have been already eating every day since the beginning of time. Ok so I'm exaggerating but you get the drift. But now I'm starting to see breakfast bowls made out of vegan yogurt and vegan ice cream which is thrilling me to no end. Today I was checking out The Chalkboard Mag and I saw this beautiful bowl staring me in the face and now I can't wait to have breakfast!
STRAWBERRY COCONUT YOGURT NICE CREAM
1 1/4 cups of frozen strawberries
1 cup of vegan coconut yogurt
1 Teaspoon of maple syrup
Optional toppings: chia seeds, berries, coconut flakes
Put the frozen strawberries and the yogurt into the blender and blend well. When the strawberries are all blended and the texture is icecreamish you can add the maple syrup (if you like it more sweet you can add even more!). Fill the nice cream into a pretty bowl and garnish it with your desired toppings, for example chia seeds and or amaranth pops.
