I don't know about you but I rarely have time to cook a big meal during the week. I usually look for meals that can be ready in under 30 minutes including 10 minutes of prep time. Since I prefer to eat vegetarian this can sometimes be hard to do. Peeling, cutting and prepping those vegetables can be quite time-consuming. As such, I often look for recipes involving beans and chickpeas. This is how I found this recipe for Crockpot chana masala. Who knew you could cook chickpeas in a crockpot! What a discovery!
This recipe is so easy and takes no time at all. Just cook the onions and spices, add water, tomatoes and chickpeas and throw into the crockpot for six hours on low. Garnish with yogurt and cilantro and you're good to go!
